Beef soup

Ingredients

1 lb of pumpkin
1 irish potato
2-3 medium carrots
1 slice beef shin
1 tablespoon Broad Beans or Split Peas
1 lb yam (yellow preferred)
1/2 cup of flour and a pinch of salt (for dumplings)
1 clove of garlic
1 teaspoon of thyme
2 stalks of escallion
1 Pepper (scotched bonnet -or- 1 teaspoon dried and crushed)
Noodles (optional)
1 medium sized turnip - sliced (optional)
1 small sized chocho - sliced (optional)
1 tablespoon butter (optional; for flavour only, not necessary - beef has oil)


Instructions

  1. Pressure together beef, beans/peas, half carrots and half pumpkin for approximately 20-25 minutes. If no pressure cooker, slow cook for approximately an hour or until beef is soft.
  2. Add garlic and remaining pumpkin - cook for another 10mins.
  3. Add food i.e. yam, potato and cook until soft (another 20mins)
  4. Add dumplings and other seasonings: escallion, thyme, pepper (and butter - optional) and simmer until liquid thickens
  5. Add remaining carrots.

Serve HOT!
