Ingredients

1 tbsp oil
1 1/4 skinless, boneless chicken thighs, cut into 1-inch cubes
1 1/2 cup roasted garlic
Pasta sauce
1 ca (15 to 19 oz) garbanzo beans, rinsed and drained
3/4 cup water
1/2 cup peanut butter
2 tbsp fresh cilantro, chopped

Rice servings

Method

  1. In 12inch skillet, heat oil on medium-high.
  2. Add chicken; cook 8 minutes, stirring.
  3. Stir in garlic, pasta sauce, garbanzo beans, water, and peanut butter; heat to boiling.
  4. Cover; simmer on low for 5 minutes.
  5. Stir in cilantro.
  6. Spoon over rice.
